This is a quick and very rich tasting soup. Curry is known to be as one of the heart healthy spices. Be sure to get the unsweetened coconut milk for heart healthy recipes. Save the sweetened coconut milk for your pina coladas! Fresh cilantro adds a freshness to this one, do not omit it.
4 cups of cauliflower florets
1/2 cup carrots, diced
1 14.5-oz can of coconut milk
1 14-oz can of chicken or vegetable broth
1 Tablespoon curry powder
1/4 cup fresh cilantro leaves, chopped
1 cup frozen baby peas
salt to taste
red pepper flakes (optional)
Place cauliflower and carrots in a medium saucepan.
Add the coconut milk, broth and curry powder and cilantro.
Bring to a boil, reduce to medium heat, cover and cook about 10 minutes.
Add the frozen peas, stir and cook uncovered until the peas are heated through.
Taste and add salt if needed.
Serve with a few red pepper flakes to spice it up a bit.

One of best ways to eat healthy is to avoid prepackaged mixes. This Spanish rice recipe can be made with ingredients you probably already have in your pantry with a fraction of the sodium. Serve with all your Mexican favorites; tacos, burritos, tamales or nachos. It also reheats well in the microwave. Try Cajun rice for a spicier version.
Healthy Recipes Ingredients
2 Tablespoons olive oil
1 cup long grain white rice
1/2 – 1 whole fresh jalapeno pepper, or other hot pepper, seeded and diced fine
1 cup water
1/2 can tomato paste
1 more cup of water
1/4 cup salsa, medium or medium hot
a few dashes of Tabasco sauce
Healthy Recipes Cooking Instructions
In a medium sauce pan, heat the olive oil over medium heat.
Add the rice and stir well to coat the rice.
Continue cooking and stirring until the rice is light brown.
Add the hot pepper and stir.
Add 1 cup of water, stir.
Add the tomato paste, stir well to combine.
Add the second cup of water, stir.
Then add the salsa, stir.
Add the hot sauce and stir once more.
Increase the heat and bring to a boil.
Cover and reduce heat to low, low, low heat.
Cook for 19 minutes.
Remove from heat, allow to rest for 5 minutes.
Fluff with a fork.
