Cooking greens on New Years Day for good luck in the coming year is a Southern tradition. But all dark greens are rich in vitamins and should be eaten throughout the entire year. Here is a simple healthy recipes to try. In order to diminish the telltale ‘aroma’ that accompanies the greens while cooking, try throwing in a couple of whole raw pecans, in the shell. It really works!
1 lb package of fresh collard greens, cut in large pieces
2 smoked ham hocks
6 quarts of water
3-4 whole pecans in the shell
salt and pepper
Place the ham hocks and water in a large pot, 8 quart size should do. Once the water boils, add the greens and the pecans. Bring to a boil. Reduce to a simmer and cover. Continue cooking for another 30 minutes to an hour, until tender.
To serve, remove pork and pecans. Add salt and pepper to taste.
