It is so difficult finding satisfying desserts that are gluten free. Pie is your answer! We found the gluten free pie crusts at Whole Foods. Don’t be surprised if you have to make this one two at a time.
2 squares of unsweetened chocolate ( 2 oz)
2 Tablespoons unsalted butter
3 large eggs
1/2 cup sugar
3/4 cup light corn syrup
1 cup of pecan halves
1 frozen gluten free pie crust
Preheat the oven to 375 degrees. Use 350 degrees for a glass pie plate.
Remove the pie crust from the freezer and allow to come to room temperature.
Melt together the chocolate and the butter over (not it) hot water until smooth and creamy.
In a separate bowl, combine the eggs, sugar and corn syrup. Blend until smooth.
Add the chocolate mixture and stir to combine.
Then add the pecans and pour into the pie crust.
Bake for 40 to 50 minutes, just until set.
Allow to cool on a rack, serve with whipping cream.
