Chicken Recipe Ingredients

2 boneless skinless chicken breasts
1/2 cup flour
salt and pepper to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
1/4 cup white vermouth
1/2 cup chicken broth
2 tablespoons finely chopped shallots or onions
1/2 pound of sliced mushrooms
1 teaspoon dried thyme
1 1/2 tablespoons balsamic vinegar
2 tablespoons chopped parsley

Free Healthy Cooking Instructions

Pound each chicken breasts to 1/2 inch thickness.
On a plate or shallow bowl, mix the flour with salt and pepper.
Dredge each breast in the flour on both sides. Shake off the excess flour.
Pre-heat a heavy pan on low heat and add the oil and butter.
When the foam subsides, add the chicken and turn up the heat to medium.
Brown each side until golden brown. About 3 minutes on each side.
Transfer to a plate and set aside.
Add the mushrooms and saute for about 3 minutes, adding more butter if necessary.
Add the shallots and saute for about 2 more minutes.
Add the vermouth and bring to a boil.
Add the chicken broth and thyme, scraping the bottom of the pan.
Return the chicken to the pan, cover and cook 20 minutes. It should be a slow simmer.
Add the balsamic vinegar and stir carefully to coat the chicken.
To serve, spoon the mushrooms and sauce over the chicken.
Top with parsley.
