Quickhealthy recipes using eggs give you all the cheesy goodness of lasagna, but without the pasta. You simply must try it. Serve with Zuchini Planks or Easy Cauliflower. Add a green salad topped with red bell pepper strips and toasted pine nuts to complete the meal.
6 hard boiled eggs, peeled and cut in half lengthwise
7 oz low fat ricotta cheese
20 oz of your favorite spaghetti sauce
6 oz low fat mozzarella cheese, shredded
1 Tablespoon Parmesan cheese, grated
Preheat the oven to 350 degrees.
Spoon a few tablespoons of the tomato sauce in a 8″ x 8″ oven proof casserole dish.
Assemble the eggs in the dish in a single layer, face up.
Tuck spoonfuls of the ricotta cheese between the eggs. Adding some on top if you have extra.
Pour in the remaining spaghetti sauce, covering all of the eggs.
Bake for 30 minutes, covered.
Remover the cover, sprinkle with the mozzarella cheese and then finish with the Parmesan cheese on top.
Bake another 15 minutes uncovered or until the cheese is melted and slightly browned.
Allow to sit 8-10 minutes before serving.
