This is so easy, it is a shame. You already know that avocado go so well with tomatoes. Also avocado has healthy mono and polyunsaturated fats. Ingredients

2 whole avocados
1 large ripe tomato
1/2 cup red onion cut in small chunks
balsamic vinegar
freshly ground black pepper

Healthy Cooking Instructions

Cut each avocado in half. Remove the pitted and peeled.
Carefully cut the avocado in large 1 inch chunks.
Cut the tomato in about the same size pieces.
Arrange the avocado, tomato and onion on a serving platter.
Drizzle with the balsamic vinegar and top with the black pepper.
Serve immediately.
