This is so easy, it is a shame. You already know that avocado go so well with tomatoes. Also avocado has healthy mono and polyunsaturated fats. Salads and easy healthy recipes with tomatoes and avocados will become a favorite summer salad dish at your patio suppers or try it with pita bread triangles and hummus dip for lunch.
2 whole avocados
1 large ripe tomato
1/2 cup red onion cut in small chunks
balsamic vinegar
freshly ground black pepper
Cut each avocado in half. Remove the pitted and peeled.
Carefully cut the avocado in large 1 inch chunks.
Cut the tomato in about the same size pieces.
Arrange the avocado, tomato and onion on a serving platter.
Drizzle with the balsamic vinegar and top with the black pepper.
Serve immediately.
