If you have a roast in the oven, you can adjust the temperature and time up or down to coincide with your roasting temperature. Any leftover potatoes can be reheated in a frying pan for breakfast the next morning and served with eggs.

Ingredients

4 medium potatoes, unpeeled and sliced in thick chunks
3 cloves of garlic
2 Tablespoons olive oil
2 Tablespoons fresh rosemary
salt and pepper

Cooking Times

Preheat oven to 350 degrees.
Pour the olive oil onto a rimmed cookie sheet ( do not use non-stick sheet )
Place potatoes, garlic and rosemary in the oil. Toss to coat with the oil.
Bake for 30 minutes. Turn the potato slices carefully and bake another 3o minutes or until done.
Sprinkle with salt and pepper before serving.
