You can use any size zucchini for this recipe. A few minutes under the broiler and tasty healthy food recipes are easy and quick to prepare. Serve with your favorite spaghetti along with simple green salad. Buono!
1 lb zucchini
extra virgin olive oil or olive oil spray
1 Tablespoon dried or fresh dill chopped fine
1 teaspoon dried red pepper flakes
2 Tablespoons Parmesan cheese, grated
Preheat the oven to 350 degrees.
Slice the zucchini lengthwise about 1/2″ slices.
On the end slices, that have the skin, sliver off a thin slice to expose the flesh.
Brush or spray each slice with olive oil.
Place on a baking sheet in a single layer.
Sprinkle with dill and red pepper flakes.
Bake for 10 minutes.
Turn each plank over.
Bake an additional 10 minutes.
Remove from oven and preheat the broiler.
Turn the zucchini over one more time.
Sprinkle with the Parmesan cheese.
Broil 3-4 inches from the heat about 1-2 minutes, until the cheese is browned.
Serve hot or room temperature.
