Healthy Recipes Ingredients

2 lbs chicken breasts
1 12-oz bottle of Frank’s Red Hot Wing Buffalo Sauce
2 8-oz packages of reduced fat cream cheese
1 16-oz bottle of blue cheese salad dressing
8 oz of shredded cheddar cheese, Monterrey Jack cheese, or combination of both

Healthy  Recipes Cooking Instructions

Place the chicken in a large saucepan. Cover the chicken with water.
It is not necessary, but you can toss in a few black peppercorns, a stalk of celery with the leaves, a carrot and a small onion if you have them on hand.
Bring to a boil, then turn down the heat and allow to simmer 15-20 minutes.
Drain the chicken. Shred the meat with two forks and place in a 13 x 9 baking dish.
Cover the chicken with the hot sauce to coat completely.
Spread in a single layer on the bottom of the dish.
Preheat the oven to 350 degrees.

In a large saucepan over medium heat, combine the cream cheese and the blue cheese dressing. Stir until smooth and hot.
Pour this over the chicken.
Bake uncovered for 20 minutes.
Sprinkle the shredded cheese over the top and bake another 10 minute
Allow to set at least 10 minutes before serving this healthy appetizer recipe.
