Quick healthy recipes for a side dish that goes well with chicken, pork or fish. Don’t be afraid to try one of the many different types of fresh greens. The most common available is napa cabbage, but bok choy and the baby bok choy is showing up on the local market shelves. The white cabbage adds some substance and the water chestnuts add a bit of crunch. Simple easy recipes for Chinese Bok Choy cooks quickly, so be sure to have all your vegetables cut ahead of time.
1 Tablespoon canola oil
2 cloves garlic, minced
3 bunches baby bok choy, washed well, cut into large pieces
1 wedge of white cabbage, sliced very fine
3 scallions, cut into 2″ pieces and cut again in half lengthwise
1/2 cup sliced water chestnuts, cut into 1/4″ pieces
1 teaspoon toasted sesame seeds
1-1/2 teaspoon reduced sodium soy sauce
In a large saute pan or wok, heat the oil over medium high heat.
Toss in the garlic and stir for about 30 seconds.
Add the bok choy stir quickly, coating all the pieces
Add the cabbage, stir well.
Add the onions and stir.
Add the water chestnuts and stir.
As soon as the bok choy starts to wilt, it is done.
Cooking Tips: To serve, top with the soy sauce and sesame seeds.
