Quinoa (pronounced keen-wa) is becoming a popular grain. Even though it is technically not a grain. Adding lean protein to your diet is easy to do with healthy breakfast recipes. One cup of cooked quinoa contains about 8 grams of protein. A great snack food. You can also reheat it in the microwave for breakfast, top with a splash of milk. Excellent!

Ingredients

1 cup white quinoa
2 cups boiling water
1/2 cup dried cherries
1/2 cup dried cranberries
2 large ripe bananas
1/2 cup apple juice
1 teaspoon grated orange peel
1/2 teaspoon cinnamon
1 teaspoon vanilla

Healthy Cooking Instructions

Rinse the quinoa, drain and place in a saucepan.
Add the boiling water.
Bring back to a boil then lower the heat to a simmer.
Simmer for 7 minutes. Stirring occasionally.
Add the cherries and cranberries. Continue to stir.
Simmer another 7 minutes, until all the liquid is absorbed.

While the quinoa is simmering, prepare the banana mixture.
Using the food processor, place the steel blade in the workbowl, add all the remaining ingredients.
Process until smooth.

Combine the banana mixture with the quinoa and mix well.
Place in a bowl, cover and refrigerate for at least an hour before serving.
