This is a classic chowder from the east coast. Healthy seafood recipes for New England Clam Chowder will warm all the tummies on a chilly day. Serve with oyster crackers. Make it supper by adding a Caesar salad and a tray of drop biscuits, warm from the oven.
4 medium potatoes, peeled and cubed
1 medium onion, minced
the leafy part of a celery stalk, minced fine
1 15-oz can of chicken broth
2 6.5 oz small cans of minced clams, fresh is better if available
1 pint of half and half
1/2 pint heavy cream
salt and pepper
Place the potatoes, onion and celery leaves in a pan.
Cover with water and cook until tender.
Drain and return to the pan.
Add the chicken broth, clams, half and half, and heavy cream.
Cook over medium heat until thoroughly heated.
Salt and pepper to taste.
If you like a thinner chowder, add milk until the consistency is right for you.
If you prefer a thicker chowder, mix 3-4 Tablespoons in 1/2 milk and stir into the chowder.
Cook a few more minutes until thickened.
