So often the best food is the simplest food. This easy salad recipe has basically only four ingredients, if you do not count the freshly ground black pepper, but you will not be left feeling there is something missing. Absolutely no salt added either. Trust us, you will not miss it. Plus it is an easy way to add your MUFA to your meal.
Healthy Recipes Ingredients
6 cups fresh arugula greens
2 whole avocados, cut into slices
extra virgin olive oil
balsamic vinegar
fresh ground black pepper
Healthy Recipes Cooking Instructions
Place the arugula in a large bowl.
Drizzle on the olive oil, 1 to 2 Tablespoons, keep it light.
Then drizzle about 1 Tablespoon of the vinegar.
Toss gently.
Arrange the avocado slices across the top.
Grind some black pepper on top of all.

In some parts of California, artichokes are definitely king. Healthy recipes for artichoke can be enjoyed warm or cold. Serve it with a baked ham or roast turkey dinner. This rice dish also tastes wonderful as a cold salad. Be sure to save some to accompany your leftovers. It can easily be doubled to serve a crowd. This one also travels well for a picnic.
1 6-oz box of Uncle Ben’s long grain and wild rice
1/2 cup mayonnaise
1 teaspoon of curry powder
1 12-oz jar of marinated artichokes, quartered
1 bunch of scallions, chopped
12 stuffed green olives, sliced
1 8-oz can of sliced water chestnuts
Cook the rice according to the directions on the box.
Blend a little of the liquid from the artichokes with the mayonnaise and curry powder. Set aside.
Drain the artichokes and add to a mixing bowl.
Add the remaining ingredients and combine well.
Add the mayonnaise mixture, folding into the rice and vegetables.
