Healthy Snack Recipes

We try to sneak in low fat protein where ever we can. Healthy Snack Recipes incorporates one of our new favorite snack foods. Serve with a seasonal fresh fruit and whole wheat toast. A healthy snack or healthy breakfast recipe that makes a great start for your day.

Ingredients

3 eggs
1 Tablespoon of fresh parsley, chopped
1 Tablespoon milk
1 wedge of Laughing Cow Lite Original Swiss Cheese
cooking spray
salt and pepper to taste

Healthy Cooking Instructions

Beat eggs until the yolks and whites are well combined.
Add the milk and parsley, beat again to mix well.
Heat a saute pan to medium high heat.
Spray with cooking spray.
Pour the eggs into the pan. Allow to cook 1-2 minutes without stirring.
Bring the edges of the eggs to center, slowly creating large curds.
When the eggs are somewhat cooked, cut the cheese into chunks and drop onto the eggs.
Carefully turn the eggs over and continue cooking another minute or two.
The eggs should be still soft but not runny.
Salt and pepper before serving.

Healthy breakfast recipes with a Vietnamese background. You can use whole eggs for each omelet or one whole egg plus one or two egg whites. The Chinese chives are a bit flatter than the traditional chives and have their own flavor. You can easily double or triple this one, just make sure you use a large enough saute pan.

Ingredients

1 Tablespoon canola oil
1/2 cup coarsely chopped Chinese chives
3 whole eggs
1 Tablespoon water
2 Tablespoon fresh chopped parsley
2-3 fresh basil leaves, chopped
salt and pepper to taste

Healthy Cooking Instructions

In a medium bowl, crack the eggs and beat until light yellow.
Add the tablespoon of water and beat until it is incorporated into the eggs.
Add the parsley and basil, combine well.
Salt and pepper to taste.

Heat a saute pan to medium high heat and add the oil.
Toss in the chives and stir for a quick flash fry.

Pour the eggs into the pan and allow to set for 2-3 minutes.
Scramble gently until curds begin to form. Pushing outer edges toward the middle.
Once it is set, flip to cook the other side.
Be careful not to overcook.
